1 1/2 pounds of leg of lamb chopped into 1" cubes
2 Medium White onions, finely chopped
6 cloves of garlic crushed and chopped
3 or 4 red chillies, finely chopped (can be left out if you don't want it too hot)
1 tin chopped tomatoes
2 tablespoonfuls of tomato puree
Add Madras curry powder or paste to taste
This is called an "easy" curry because it's cooked in a pot without any pre-frying of the ingredients.
Ingredients for 4 people.
Put all the ingredients into a casserole or other suitable oven-proof dish.
Stir thoroughly to mix well.
Add enough chicken stock to cover and stir well.
Put the oven @ 150 degrees C. and cook for about two hours, topping the dish up with a little stock during the cooking, if required.
